  • 1 1/2 pounds fresh Brussels sprouts, trimmed
  • 2 tablespoons olive oil
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • lemon zest or chopped parsley for garnish (optional)

  • Instructions

    1. Preheat oven to 425°F (220°C) and bring a large pot of salted water to a boil.

    2. Add Brussels sprouts and cook for 10–12 minutes until fork-tender, then drain and pat fully dry.

    3. Arrange sprouts on a parchment-lined baking sheet and smash each with the bottom of a glass or potato masher.

    4. Drizzle sprouts with olive oil and season with garlic powder, salt, pepper, and half of the Parmesan cheese, then flip and repeat.

    5. Roast for 20–25 minutes until edges are golden and crisp, broiling for 2 minutes at the end if extra crunch is desired.

    6. Remove from oven, sprinkle with remaining Parmesan and garnish, then serve immediately.
