Description

A vibrant autumn salad combining tender chicken, crisp apples, fresh peas, and a creamy greek yogurt dressing for a nutritious and satisfying healthy lunch.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 2 medium honeycrisp or fuji apples, chopped, unpeeled
  • 1/2 cup fresh or thawed peas
  • 1/2 cup celery, finely diced
  • 1/4 cup red grapes or dried cranberries (optional)
  • 2 cups spinach or mixed greens
  • 1/4 cup toasted walnuts or pecans
  • 1 tablespoon fresh parsley or thyme, chopped
  • 3/4 cup plain non-fat greek yogurt
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • salt and black pepper to taste

  • Instructions

    1. If using raw chicken, season breasts with salt and pepper and cook until fully done, about 15–20 minutes, then shred or dice

    2. Dice apples and toss with lemon juice to prevent browning

    3. Finely dice celery and measure peas and greens

    4. In a bowl, whisk greek yogurt, dijon mustard, honey, lemon juice, salt, and pepper to make the dressing

    5. Combine chicken, apples, peas, celery, and herbs in a large bowl

    6. Pour dressing over mixture and toss gently to coat

    7. Fold in toasted nuts or seeds and add greens just before serving

    8. Serve as a salad, in a wrap, sandwich, or lettuce cups as desired
