Instructions
1. In a bowl sift together flour, baking powder, salt, cinnamon and nutmeg.
2. In a separate bowl whisk sourdough starter, eggnog, eggs, melted butter and vanilla.
3. Pour wet ingredients into dry and stir until just combined, leaving small lumps.
4. Let the batter rest at room temperature for 10 to 15 minutes.
5. Heat a griddle or non-stick skillet over medium heat and grease lightly.
6. Ladle 1/4 cup batter per pancake onto the hot surface and cook until bubbles form, 2 to 3 minutes.
7. Flip pancakes and cook until golden brown, then keep warm in a 200°F oven.
8. In a saucepan combine cranberries, sugar, water, orange zest and salt and simmer over medium heat until thick and glossy, about 8 to 10 minutes.
9. Serve pancakes stacked and drizzle generously with warm cranberry syrup.
