  • 1/2 cup active or discard sourdough starter
  • 3/4 cup warm water
  • 2 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon sugar or honey
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup diced pepperoni or veggies
  • 2 tablespoons melted butter or garlic butter

  • Instructions

    1. Combine starter, warm water, and olive oil in a bowl and stir to blend.

    2. Add flour, sugar or honey, and salt; mix until a soft dough forms.

    3. Knead dough by hand or with a stand mixer dough hook for 6–8 minutes until smooth and elastic.

    4. Place dough in a lightly oiled bowl, cover, and let rise 3–4 hours at room temperature or overnight in refrigerator.

    5. On a floured surface, divide dough into bite-sized pieces and roll into balls for bites.

    6. Flatten other pieces into discs; fill each with mozzarella, herbs, and toppings, then seal edges for mini pizza buns.

    7. Arrange pieces on a parchment-lined baking sheet, cover, and proof 30–45 minutes.

    8. Preheat oven to 400°F (200°C).

    9. Brush bites and buns with olive oil or garlic butter and sprinkle with extra cheese or herbs.

    10. Bake 15–18 minutes until golden brown and crisp.

    11. Cool briefly on a rack before serving with desired dips.
