4. Place dough in a lightly oiled bowl, cover, and let rise 3–4 hours at room temperature or overnight in refrigerator.
5. On a floured surface, divide dough into bite-sized pieces and roll into balls for bites.
6. Flatten other pieces into discs; fill each with mozzarella, herbs, and toppings, then seal edges for mini pizza buns.
7. Arrange pieces on a parchment-lined baking sheet, cover, and proof 30–45 minutes.
