Flavorful Stir Fry Noodles

Description

Quick and customizable stir fry noodles loaded with fresh vegetables, protein, and a savory sauce for an easy weeknight dinner.


Ingredients

  • 8 oz lo mein, rice, or udon noodles
  • 1 cup sliced bell peppers
  • 1 cup broccoli florets
  • 1 carrot julienned
  • 1/2 cup snap peas
  • 2 cloves garlic minced
  • 1 cup diced chicken or tofu
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 tsp honey
  • 1 tsp cornstarch
  • 3 tbsp water
  • 2 tbsp vegetable oil
  • 2 green onions sliced
  • 1 tbsp sesame seeds
  • lime wedges

  • Instructions

    1. Cook the noodles according to package directions until al dente, drain, rinse under cold water, and toss with a splash of sesame oil

    2. Chop all vegetables into bite-sized pieces and slice protein thinly

    3. Preheat a wok or large skillet over high heat and add 1 tbsp vegetable oil

    4. Add protein and stir fry for 3-4 minutes until cooked through, then remove and set aside

    5. Add remaining oil, then garlic and harder vegetables like broccoli and carrots, stir fry for 2-3 minutes

    6. Add bell peppers and snap peas and cook until crisp-tender

    7. Return protein to the pan and add noodles

    8. Whisk soy sauce, oyster sauce, sesame oil, honey, cornstarch, and water, then pour over noodles and toss to coat

    9. Adjust seasoning with more soy sauce or honey as needed

    10. Serve immediately, garnished with green onions, sesame seeds, and lime wedges
