Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 5 cups fresh arugula
  • 8 oz fresh burrata cheese (2 balls)
  • 1/2 cup toasted almonds or pistachios
  • 2 tablespoons balsamic glaze
  • Salt and freshly ground black pepper to taste

  • Instructions

    1. Brush peach halves with olive oil and preheat grill or grill pan to medium heat.

    2. Grill peaches cut-side down for 2–3 minutes, then flip and grill 2–3 more minutes until caramelized.

    3. In a large bowl, toss arugula with a drizzle of olive oil, salt, and pepper; spread on a serving platter.

    4. Arrange grilled peaches over arugula and tear burrata into rustic pieces, placing among the peaches.

    5. Sprinkle toasted nuts over the salad and drizzle with balsamic glaze.

    6. Season with additional salt and pepper if desired and serve immediately.
