Description

  • lbs fresh lobster meat, steamed and chopped
  • 23 tbsp unsalted butter
  • 12 tsp fresh lemon juice
  • 2 tbsp chopped fresh chives or parsley
  • to taste sea salt and cracked black pepper
  • 4 split-top hot dog buns, buttered and toasted

  • Instructions

    1. Bring a large pot of salted water to a rolling boil and add lobster; cook 8–10 minutes until shell is bright red and meat is opaque.

    2. Transfer lobster to an ice bath, then extract tail and claw meat and cut into bite-size chunks.

    3. Melt butter over low heat, add a pinch of sea salt, lemon juice, and chopped herbs, and keep warm.

    4. Toss lobster meat gently with warm butter mixture and cracked black pepper in a bowl.

    5. Brush buns with butter and toast on a skillet until golden and crisp, about 1–2 minutes per side.

    6. Fill each bun with the buttered lobster mixture, garnish with extra herbs, and serve immediately with lemon wedges.
