    1. Prepare the Watermelon: Start by cutting your seedless watermelon into roughly 1-inch cubes. If your watermelon has seeds, take a moment to remove them carefully. You should aim for about 4 cups of cubed watermelon.

    2. Blend the Watermelon: Place the cubed watermelon into a blender. Blend on high speed until it’s completely smooth and no chunks remain. This might take a minute or two, depending on your blender.

    3. Strain the Watermelon Puree (Optional but Recommended): For a smoother, less pulpy popsicle, pour the blended watermelon through a fine-mesh sieve into a large bowl. Use the back of a spoon to press down on the solids, extracting as much juice as possible. Discard any pulp left in the sieve.

    4. Combine with Greek Yogurt: Add the plain Greek yogurt and the optional lime juice to the strained watermelon puree. Whisk everything together thoroughly until the mixture is uniform in color and completely smooth.

    5. Fill the Popsicle Molds: Carefully pour the watermelon and yogurt mixture into your popsicle molds, leaving a small space at the top (about 1/4 inch) to allow for expansion during freezing.

    6. Insert Popsicle Sticks: Place the popsicle sticks into the molds. If your molds have covers with stick slots, use those. Otherwise, you can cover the top of the molds with aluminum foil and poke the sticks through the foil to keep them upright.
