  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 1 tablespoon fresh lime juice (optional, for brightness)
  • Popsicle molds
  • Popsicle sticks

  • Instructions

    1. Prepare the Watermelon: Start by cutting your seedless watermelon into cubes. If your watermelon has seeds, take a moment to remove them carefully. Place the cubed watermelon into a blender.

    2. Blend the Watermelon: Blend the watermelon until it is completely smooth and liquid. There should be no chunks remaining. If you’re using the optional lime juice, add it to the blender now.

    3. Strain for Smoothness (Optional but Recommended): For an extra smooth pop, pour the blended watermelon juice through a fine-mesh sieve into a separate bowl. This removes any pulp or small fibers, resulting in a silkier texture. Gently press the pulp against the sieve with a spoon to extract all the juice.

    4. Layer the Popsicle Molds: Pour the strained watermelon juice into your popsicle molds, filling each mold about two-thirds of the way.

    5. Add the Greek Yogurt Layer: Carefully spoon or pour the plain Greek yogurt on top of the watermelon layer in each mold. You can gently tap the molds on the counter to help the yogurt settle evenly.

    6. Insert Sticks and Freeze: Place the popsicle sticks into the molds. If your molds have lids with stick slots, use those. Transfer the filled molds to the freezer.

    7. Freeze Until Solid: Allow the popsicles to freeze for at least 4-6 hours, or preferably overnight, until they are completely solid. This ensures they hold their shape perfectly when removed.

    8. Enjoy Your Frozen Treats: Once fully frozen, briefly run the molds under warm water (just a few seconds!) to easily release the popsicles. Serve immediately and enjoy!
