  • 1 bunch fresh asparagus, trimmed and cut into thirds
  • 3 tbsp unsalted butter, divided
  • 1 tbsp olive oil
  • 45 garlic cloves, minced
  • 1 lemon, juice and zest
  • 1/4 cup chicken broth or stock
  • 1 tsp dried Italian herbs or parsley
  • salt and black pepper to taste
  • pinch of red chili flakes (optional)

  • Instructions

    1. Trim asparagus and cut into thirds. Pat chicken dry and season with salt, pepper, and half the dried herbs.

    2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken in a single layer and sear undisturbed until golden, about 3 minutes per side. Remove and keep warm.

    3. Add 1 tbsp butter to the skillet. Sauté asparagus with a pinch of salt for 2–3 minutes until bright green and crisp-tender. Add a splash of broth if desired, then transfer asparagus to the plate with chicken.

    4. Reduce heat to medium. Add remaining 1 tbsp butter and minced garlic, stirring constantly for 30 seconds until fragrant. Pour in chicken broth, lemon juice, and lemon zest, and simmer briefly.

    5. Return chicken and asparagus to the skillet, tossing to coat in the sauce. Warm through for 1–2 minutes, adjust seasoning with salt, pepper, or herbs, and swirl in extra butter or olive oil if desired.

    6. Garnish with chopped parsley or extra lemon zest and serve immediately, family-style or plated with grains or bread to soak up the sauce.
