Instructions
1. Feed sourdough starter 6–8 hours before mixing until bubbly.
2. Combine flours, sugar, salt and spice in bowl.
3. Add warm milk, eggs, butter and starter; mix until elastic.
4. Fold in citrus zest and dried fruit.
5. Bulk ferment dough in oiled bowl for 4–6 hours until doubled.
6. Deflate dough and roll into a 24 inch rope.
7. Twist rope and join ends to form a wreath; transfer to parchment.
8. Proof shaped wreath 1–2 hours until puffy.
9. Preheat oven to 190°C (375°F) with baking stone.
10. Bake wreath 25–30 minutes until golden and hollow-sounding.
11. Cool completely on rack before glazing.
12. Mix powdered sugar with citrus juice and drizzle over loaf.
13. Decorate with candied orange slices or cranberries if desired.
