Fluffy homemade marshmallows decorated like the iconic Stay Puft Marshmallow Man—perfect for Halloween parties, movie nights, and Ghostbusters-themed celebrations.
Ingredients
2 cups granulated sugar
1 cup light corn syrup
3 packets unflavored gelatin (about 3 tablespoons)
3/4 cup cold water, divided (1/2 cup + 1/4 cup)
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
1 cup powdered sugar, plus more for dusting
Neutral oil or cooking spray, for the pan
Blue food coloring, a few drops (hat band detail)
Red food coloring, a few drops (bow detail)
Black edible marker or black decorating gel (eyes and smile)
Optional: melted chocolate and sprinkles for dipping
Instructions
1. Lightly oil a 9×13-inch pan, line with parchment, and dust with powdered sugar.
2. Bloom gelatin: add 1/2 cup cold water to a mixer bowl; sprinkle gelatin over the top and let stand 10 minutes.
3. Cook syrup: combine sugar, corn syrup, salt, and 1/4 cup water in a saucepan. Bring to a boil over medium-high heat without stirring.
4. Attach a candy thermometer and cook syrup to 240°F (soft-ball stage). Remove from heat.
5. With mixer on low, carefully stream hot syrup into the bloomed gelatin.
6. Increase speed to high and whip 8–10 minutes until thick, glossy, and tripled in volume; beat in vanilla in the last minute.
7. Immediately scrape mixture into the prepared pan, smooth the top, and dust with powdered sugar.
8. Let set uncovered at room temperature 6–8 hours or overnight.
9. Loosen, invert onto a sugared board, and cut into cubes with a powdered-sugar-coated knife; toss pieces lightly in more powdered sugar to prevent sticking.
10. Decorate: draw eyes and a smile with black marker/gel; brush a thin blue band on top edge and add a tiny red bow detail. Let dry before serving.
