Description

  • 56 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 4 tablespoons butter, divided
  • 1 cup sour cream
  • 1 1/2 cups shredded cheese (cheddar or mozzarella)
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or crushed crackers
  • salt to taste
  • black pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)

  • Instructions

    1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch casserole dish.

    2. Slice the yellow squash and chop the onion into a large skillet.

    3. Melt 2 tablespoons of butter over medium heat and sauté squash and onion until slightly softened and translucent.

    4. Drain any excess liquid from the skillet to prevent a watery casserole.

    5. In a mixing bowl, combine the cooked squash and onions with sour cream, shredded cheese, beaten eggs, salt, pepper, and optional spices.

    6. Melt the remaining 2 tablespoons of butter and stir into the breadcrumbs or crushed crackers to form the topping.

    7. Spread the squash mixture evenly in the prepared casserole dish and sprinkle with reserved cheese.

    8. Cover the cheese layer with the buttery breadcrumb mixture.

    9. Bake for 30–35 minutes until the casserole is bubbly and the topping is golden brown.

    10. Allow the casserole to rest for 5–10 minutes before serving to help it set.
