  • 4 ears fresh corn on the cob
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 large red bell pepper, diced
  • 1/2 medium red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice, freshly squeezed
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Black pepper to taste

  • Instructions

    1. Preheat a grill or grill pan over medium-high heat and brush corn with olive oil.

    2. Grill corn, turning every 2 minutes, until kernels are charred, about 8–10 minutes. Let cool slightly and cut kernels off the cob.

    3. Dice red bell pepper, chop onion, halve tomatoes, and chop cilantro.

    4. In a large bowl, combine corn kernels, black beans, bell pepper, onion, tomatoes, and cilantro.

    5. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper. Adjust seasoning to taste.

    6. Pour dressing over salad and toss gently to combine.

    7. Chill for 10–15 minutes before serving to allow flavors to meld.

    8. Serve chilled or at room temperature as a side or light main. Enjoy!
