Grilled Greek Chicken Kabobs with Fresh Mediterranean Toppings

Description

Juicy chicken skewers marinated in olive oil, lemon, garlic, and oregano, grilled to perfection and topped with feta, olives, and fresh herbs for a vibrant Mediterranean feast.


Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into 1.5-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • 1 zucchini, sliced into 1/2-inch rounds
  • 1 cup cherry tomatoes
  • 1/3 cup extra virgin olive oil
  • zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced kalamata olives
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped parsley
  • tzatziki sauce, for serving
  • lemon wedges, for serving

  • Instructions

    1. In a bowl whisk olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.

    2. Add chicken cubes to the marinade, toss to coat, cover and refrigerate for at least 1 hour or up to 6 hours.

    3. Soak wooden skewers in water for 20 minutes to prevent burning.

    4. Preheat grill to medium high heat and brush grates with oil.

    5. Thread chicken and vegetables onto skewers, alternating pieces.

    6. Grill skewers for 10–12 minutes, turning every 3 minutes, until chicken reaches 165°F and vegetables are tender.

    7. Remove skewers from grill and let rest for 5 minutes.

    8. Arrange skewers on a platter, drizzle with olive oil and top with feta, olives, dill, and parsley.

    9. Serve with tzatziki sauce and lemon wedges on the side.
