  • salt to taste
  • black pepper to taste
  • 2 bell peppers sliced
  • 1 large zucchini sliced
  • 1 cup cherry tomatoes
  • 1 red onion sliced

    1. In a bowl whisk lemon juice, lemon zest, olive oil, garlic, oregano, basil, salt, and pepper

    2. Place chicken in a resealable bag and pour in the marinade

    3. Seal and refrigerate for 30 minutes to 2 hours

    4. Toss bell peppers, zucchini, tomatoes, and onion with olive oil, salt, and pepper

    5. Preheat grill to medium high and oil the grates

    6. Grill chicken 5–6 minutes per side until internal temperature reaches 165°F

    7. Grill vegetables 6–8 minutes until tender and charred

    8. Let chicken rest 5 minutes then slice

    9. Arrange vegetables on a platter and top with sliced chicken

    10. Garnish with extra basil and a drizzle of lemon juice
