A fusion sandwich featuring tangy grilled sourdough, fresh mozzarella, ripe tomatoes, basil, and a creamy homemade guacamole layer. Perfect for a quick lunch or a wholesome dinner.

Instructions
1. Prepare the guacamole by mashing avocado with lime juice, minced garlic, salt, and pepper until slightly chunky.
2. Pat tomato slices dry with a paper towel to prevent sogginess.
3. Brush one side of each sourdough slice with olive oil.
4. Place bread oil-side down and spread guacamole on the un-oiled side of two slices.
5. Layer basil leaves, tomato slices, and mozzarella on top of the guacamole.
6. Optionally drizzle with balsamic glaze, then top with the remaining bread slices, oil-side out.
7. Preheat a panini press or skillet over medium heat.
8. Grill sandwiches for 3–4 minutes per side or until bread is golden and cheese is melted.
9. Let the panini rest for one minute, then slice on the diagonal and serve warm.
