Instructions
1. Wash and pat vegetables dry then slice peppers, zucchini, eggplant, and onion evenly
2. Toss sliced vegetables and cherry tomatoes with olive oil, salt, pepper, and oregano in a large bowl
3. Preheat grill or grill pan to medium-high and brush grates with oil
4. Grill vegetables in batches for 2-4 minutes per side until tender with char marks
5. Transfer grilled vegetables to a tray and let rest for one minute
6. In a food processor combine feta, Greek yogurt, olive oil, and lemon juice and blend until smooth
7. Adjust seasoning and transfer whipped feta to a small bowl
8. Arrange the whipped feta bowl on a platter, surround with grilled vegetables, drizzle olive oil over all and garnish with herbs and red pepper flakes
