  • 1 red onion, cut into 1/2-inch thick rounds
  • 8 ounces asparagus spears, trimmed
  • 1 tablespoon olive oil, plus extra for brushing
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces block feta cheese, crumbled
  • 1/4 cup plain Greek yogurt (full-fat recommended)
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped (plus more for garnish)
  • 1 tablespoon fresh parsley, chopped
  • Pinch of red pepper flakes (optional)

  • Instructions

    1. Prepare the Vegetables for Grilling: Wash and pat dry all your chosen vegetables. Cut the bell peppers into 1-inch strips, slice the zucchini and yellow squash lengthwise into 1/2-inch planks, and cut the red onion into 1/2-inch thick rounds. Trim the woody ends off the asparagus spears. In a large bowl, toss the prepared vegetables with 1 tablespoon of olive oil, salt, and black pepper until evenly coated.

    2. Preheat Your Grill: Preheat your outdoor grill to medium-high heat. If using a grill pan indoors, preheat it over medium-high heat until hot. Lightly brush the grill grates or grill pan with a little extra olive oil to prevent sticking.

    3. Grill the Vegetables: Arrange the seasoned vegetables in a single layer on the hot grill. Grill for 3-5 minutes per side, or until they are tender-crisp and have nice char marks. Thicker vegetables like onion rounds might take slightly longer. Remove the grilled vegetables from the grill and set them aside on a platter.

    4. Prepare the Whipped Feta Dip: While the vegetables are grilling, combine the crumbled feta cheese, Greek yogurt, fresh lemon juice, minced garlic, chopped fresh dill, and chopped fresh parsley in a food processor.

    5. Whip the Feta Dip: Process the ingredients for the dip until the mixture is smooth and creamy. You may need to scrape down the sides of the food processor a few times to ensure everything is incorporated. Taste and adjust seasonings if needed, adding a pinch of red pepper flakes for a little heat, if desired.

    6. Assemble and Serve: Transfer the whipped feta dip to a serving bowl. Arrange the warm grilled vegetables artfully around the dip on a large platter. Garnish the dip with a sprinkle of fresh dill or a drizzle of olive oil, if desired. Serve immediately and enjoy!
