Quick, creepy, and delicious party bites made with salami, mini mozzarella, and olive “pupils” for a spooky Halloween platter.
Ingredients
24 thin salami slices
24 mini mozzarella balls (bocconcini)
12 large black olives, sliced into rings
1 roasted red pepper, cut into thin strips (or red food gel), optional
Fresh parsley or basil, for garnish, optional
24 cocktail picks or toothpicks, optional for serving
Instructions
1. Slice the black olives into rings to make “pupils.” Pat dry to reduce slipping.
2. Lay out 24 salami slices on a board or platter.
3. Place one mini mozzarella ball in the center of each salami slice.
4. Press an olive ring onto the top of each mozzarella ball to form the pupil.
5. Add thin red pepper strips or a few lines of red gel for bloodshot “veins,” if desired.
6. Gently cup the salami around the cheese; secure with a toothpick if transporting.
7. Arrange on a dark platter, garnish with parsley or basil for contrast.
8. Chill up to 4 hours before serving; add red gel just before setting out.
