2. Toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast 25–30 minutes, flipping halfway.
3. Heat remaining olive oil in a skillet over medium-high heat. Sauté onion until soft, about 3 minutes, then add garlic and cook 30 seconds.
4. Add ground beef, breaking up with a spatula. Cook until browned, about 6–8 minutes. Season with cumin, chili powder, salt, and pepper.
5. While beef cooks, slice avocado and toss greens with a squeeze of lime.
6. Assemble bowls with a base of greens, roasted sweet potatoes, seasoned beef, and avocado slices. Garnish with cilantro and lime wedges.
