Instructions
1. Wash, peel, and dice sweet potatoes; chop onion and bell peppers; mince garlic.
2. Heat a large skillet over medium heat and add olive oil.
3. Add ground turkey, season with salt and pepper, and cook until browned, 6–8 minutes; transfer to a plate.
4. In the same skillet, add more oil if needed and sauté onions and bell peppers until softened, 3–4 minutes.
5. Stir in garlic, paprika, and cumin; cook 30 seconds to release aromas.
6. Add sweet potatoes and a splash of water or broth; cover and cook until tender, 8–10 minutes, stirring occasionally.
7. Return turkey to the skillet, mix well, and adjust seasoning with salt, pepper, or chili flakes.
8. Fold in optional veggies or beans if using and heat through 2–3 minutes.
9. Remove from heat, garnish with fresh herbs and a squeeze of lemon before serving.
