  • 2 medium zucchini, shredded (about 2 cups)
  • 1 cup fresh or thawed frozen corn kernels
  • 1/2 cup chickpea flour
  • 1 tbsp ground flaxseed mixed with 3 tbsp water
  • 2 green onions, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp baking powder
  • 23 tbsp olive oil or avocado oil for cooking

  • Instructions

    1. Wash and trim zucchini, shred with a box grater, place in a towel, sprinkle with salt, let sit 10 minutes, then squeeze out excess moisture.

    2. Combine ground flaxseed and water in a small bowl and let thicken for 5 minutes.

    3. In a large bowl, mix drained zucchini, corn kernels, green onions, parsley, chickpea flour, baking powder, garlic powder, smoked paprika, salt, pepper, and flax “egg” until a thick batter forms.

    4. If batter is too wet, add a tablespoon more flour; if too dry, add a splash of water or plant milk.

    5. Heat 1 tablespoon oil in a skillet over medium heat, form batter into small patties, and place in skillet without overcrowding.

    6. Cook fritters 3–4 minutes per side until golden and crisp, adding oil between batches as needed, then drain on paper towels.

    7. Optional baking method: preheat oven to 400°F (200°C), arrange patties on parchment, brush with oil, and bake 10–12 minutes per side until crisp.
