1. Pat beef dry and brown in batches in a heavy pot with oil over medium-high heat, about 5 minutes per batch.
2. Remove beef and sauté onions, garlic, carrots, and celery in the same pot over medium heat until onions are translucent, about 4–5 minutes.
3. Stir in tomato paste and thyme, cook for 1 minute.
4. Deglaze with a splash of broth, scraping up browned bits, then return beef to pot.
5. Add remaining broth and bay leaf, bring to a gentle boil, then reduce heat and simmer partially covered for 45–60 minutes until beef is tender.
6. Stir in egg noodles and cook uncovered for 6–8 minutes until noodles are al dente.
7. Remove bay leaf, season with salt and pepper to taste.
8. Ladle soup into bowls and garnish with chopped parsley.
