Description

Ingredients

  • 5 boneless skinless chicken breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 8 ounces orzo pasta
  • 4 ounces Boursin cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • salt and pepper to taste
  • pinch crushed red pepper (optional)

  • Instructions

    1. Place diced onion, carrots, celery, and garlic in crockpot and top with chicken breasts.

    2. Pour in chicken broth and season with salt, pepper, thyme, and parsley. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours.

    3. Remove chicken and shred with two forks, then return to crockpot.

    4. Stir in orzo and cook on high for 20 to 25 minutes until tender.

    5. Add Boursin cheese and stir until melted and creamy.

    6. Taste and adjust seasoning with salt, pepper, or extra broth as needed.

    7. Ladle into bowls, garnish with fresh parsley, and serve with crusty bread.
