1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin lightly
2. On a lightly floured surface roll out the thawed puff pastry and cut into 2×2 inch squares
3. Gently press each pastry square into the wells of the mini muffin tin to form cups
4. Place a Brie cube in each pastry cup and top with about half a teaspoon of cranberry sauce
5. Add chopped nuts or a small rosemary sprig on top of each bite if desired
6. Bake the bites for 12 to 15 minutes until the pastry is puffed and golden brown
7. Let the bites cool in the tin for five minutes before removing them to a cooling rack
