2. Roast cashews in a dry skillet over medium heat for 2–3 minutes until golden; set aside.
3. Heat remaining oil in a wok or large skillet; sauté garlic and ginger 20 seconds until fragrant.
4. Add chicken in a single layer; cook 4–5 minutes per side until golden and cooked through.
5. Whisk remaining soy sauce, honey, and rice vinegar; pour into pan and stir until sauce thickens and glazes chicken.
6. Add cashews and bell pepper; cook 1–2 minutes to combine.
7. Remove from heat, sprinkle with green onions, toss gently, and serve immediately.
