1. In a large bowl combine sourdough starter, warm milk, melted butter, and sugar until smooth.
2. Add flour and salt and mix until a sticky dough forms.
3. Knead the dough on a lightly floured surface for 8–10 minutes until elastic and smooth.
4. Place the dough in a greased bowl, cover, and let rise in a warm spot for 3–4 hours until doubled.
5. While the dough rises, melt butter with garlic, olive oil, and parsley to make garlic butter.
6. Punch down the dough and roll it into a 1/2 inch thick rectangle.
7. Brush the dough with garlic butter and sprinkle evenly with mozzarella and Parmesan.
8. Cut the dough into pieces, stack them in a greased loaf or round pan, cover, and let rise 45–60 minutes.
9. Preheat the oven to 350°F, brush the top with more garlic butter, and bake for 25–30 minutes until golden and bubbly.
10. Let the bread rest in the pan for 10 minutes before serving.
