1. In a bowl combine honey, lime juice, olive oil, garlic, oregano, parsley, salt, and pepper to make the marinade.
2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them.
3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
4. Preheat grill or grill pan to medium-high heat (400°F/200°C) and oil the grates.
5. Remove chicken from marinade and let rest at room temperature for 10 minutes.
6. Grill chicken for 5–6 minutes per side until internal temperature reaches 165°F (74°C).
7. Transfer chicken to a plate and let rest for 5 minutes before slicing.
8. Drizzle with any reserved marinade that has been boiled for safety and garnish with extra parsley or lime zest.
9. Serve warm or chilled with desired sides such as roasted vegetables, quinoa, salad, or pita.
