1. Preheat oven to 425°F (220°C).
2. Toss diced sweet potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
3. Meanwhile, whisk honey, hot sauce, chili flakes, and vinegar in a small bowl and set aside.
4. Heat remaining olive oil in a skillet over medium-high heat. Pat chicken dry and season with garlic powder, salt, and pepper.
5. Sear chicken 3-4 minutes per side until golden. Reduce heat, pour half the hot honey sauce over chicken, and cook until glaze thickens, turning once.
6. Warm cooked quinoa or rice.
7. Slice chicken and assemble bowls with grains, roasted sweet potatoes, glazed chicken, greens, avocado, and pumpkin seeds.
8. Drizzle remaining hot honey sauce over bowls and serve with lime wedges.
