A sweet, savory, and healthy twist on classic Chinese cashew chicken featuring tender chicken, crunchy cashews, and a glossy honey-soy glaze.

Instructions
1. Combine chicken pieces with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1/2 tablespoon honey; marinate for 10–15 minutes.
2. Heat a wok over medium heat, toast cashews for 2–3 minutes until golden, then remove and set aside.
3. Increase heat to high, add 1 tablespoon oil, stir-fry marinated chicken for 4–5 minutes until browned; remove and keep warm.
4. Add remaining oil to the wok, stir-fry garlic, bell peppers, and broccoli for 2–3 minutes until crisp-tender.
5. Whisk together remaining soy sauce, honey, water or broth, and cornstarch; pour into wok and stir until sauce thickens.
6. Return chicken and cashews to the wok, toss to coat in the honey glaze, adjust seasoning if needed.
7. Garnish with chopped green onions and serve immediately over rice, noodles, or cauliflower rice.
