Description
A foolproof, family-friendly method for tender, juicy chicken breasts baked in the oven with olive oil, garlic, herbs, and a bright touch of lemon.
Ingredients
4 boneless, skinless chicken breasts (6–8 oz each)
2 tbsp olive oil
2 garlic cloves, minced
1 tsp kosher salt
1/2 tsp black pepper
1 tsp dried Italian seasoning (or 1/3 tsp each thyme, oregano, basil)
1 tbsp lemon juice
1/2 tsp paprika (optional)
1 tsp honey (optional)
1 tbsp chopped fresh parsley, for garnish (optional)
4 cups cold water (optional quick brine)
2 tbsp kosher salt (optional quick brine)
1 tbsp sugar (optional quick brine)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet or shallow dish with foil or parchment.
2. Trim chicken and pound to an even 3/4–1 inch thickness for uniform cooking.
3. Optional: Brine 20–30 minutes in 4 cups water mixed with 2 tbsp salt (and 1 tbsp sugar). Rinse and pat very dry.
4. Whisk olive oil, garlic, salt, pepper, Italian seasoning, lemon juice, and paprika/honey if using.
5. Coat chicken on both sides with the mixture; arrange on the sheet without crowding.
6. Bake 18–25 minutes, checking temperature at 18 minutes; remove when the thickest part hits 165°F (74°C).
7. Rest 5 minutes, loosely tented with foil, to let juices redistribute.
8. Slice against the grain, garnish with parsley, and serve with your favorite sides.
