Ingredients

  • all-purpose flour (4 cups)
  • baking soda (1 teaspoon)
  • salt (1 teaspoon)
  • cold butter, optional (2 tablespoons)
  • shredded cheddar cheese (1 1/2 cups)
  • fresh chives, finely chopped (3 tablespoons)
  • buttermilk (1 3/4 cups)

  • Instructions

    1. Preheat the oven to 425°F (220°C) with a Dutch oven inside.

    2. Whisk together flour, baking soda, and salt in a large bowl.

    3. Rub cold butter into the dry ingredients until mixture resembles coarse crumbs.

    4. Fold in the shredded cheddar and chopped chives.

    5. Make a well in the center, pour in buttermilk, and stir until just combined.

    6. Turn dough onto a floured surface and knead lightly 3–4 times.

    7. Shape into a 7-inch round loaf and place on parchment paper.

    8. Score a deep cross on top with a sharp knife.

    9. Transfer loaf with parchment to the hot Dutch oven, cover, and bake 30 minutes.

    10. Remove lid and bake 10–15 minutes more until golden brown.

    11. Cool on a rack before slicing.
