1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large skillet, melt 2 tablespoons butter over medium heat and sauté onion and squash for 7–8 minutes until softened. Drain any excess liquid.
3. In a bowl, combine cooked vegetables with cheddar cheese, sour cream, beaten egg, salt, pepper, and 1/2 cup crushed crackers. Stir until well mixed.
4. Spread the mixture evenly in the prepared baking dish.
5. Mix remaining 1/2 cup crushed crackers with melted butter and sprinkle over the top of the casserole.
6. Bake uncovered for 25–30 minutes until topping is golden and filling is bubbly.
7. Let rest for 5 minutes before serving.
