1. In a saucepan combine peaches, brown sugar, vinegar, garlic, paprika, chili powder, salt, and pepper and simmer for 10–15 minutes until peaches soften
2. Stir in honey, soy sauce, and lemon juice and simmer until sauce thickens, then cool and blend until smooth, reserving half for serving
3. Place chicken and half the sauce in a bag or dish, toss to coat, and refrigerate for at least 2 hours or overnight
4. Preheat grill to medium-high (400°F/200°C) and oil grates
5. Sear chicken on the hot side for 3–4 minutes per side to create grill marks
6. Move chicken to cooler side, baste with sauce, and grill for 20–25 minutes turning and basting every few minutes until internal temperature reaches 165°F (74°C)
7. Transfer chicken to a platter, brush with remaining sauce, and let rest 5 minutes before serving
