A foolproof recipe for tender, flavorful turkey breast roasted in an oven bag with herbs and butter. Perfect for smaller gatherings and easy cleanup.

1. Preheat oven to 350°F (175°C).
2. Place an oven-safe roasting bag in a roasting pan and coat inside with 1 tablespoon flour.
3. Pat turkey breast dry with paper towels.
4. In a bowl, combine butter, olive oil, garlic, herbs, salt, pepper, and paprika.
5. Gently lift skin and rub half the butter mixture under skin. Spread remaining mixture over surface.
6. Add lemon zest or herb sprigs under skin if using.
7. Place turkey in the bag and pour broth into bottom. Seal bag with a small vent.
8. Roast until internal temperature reaches 165°F (74°C), about 1 hour 45 minutes for 5–6 pounds.
9. For crispier skin, open bag during last 10–15 minutes.
10. Remove turkey, cut bag open carefully, and transfer to cutting board.
11. Rest uncovered for 15–20 minutes before carving.
12. Carve against the grain and serve with pan juices or gravy.
