Ingredients

Scale
  • 1 cup oysters (fresh, leftover, or canned)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 medium onion, finely chopped
  • 1 stalk celery, chopped
  • 2 cups broth (seafood or chicken)
  • 1/2 cup heavy cream (optional)
  • 1 cup cooked rice (optional for rice bowl)
  • 1 tablespoon fresh herbs (parsley or thyme), chopped
  • Salt and pepper to taste
  • 1 teaspoon lemon juice
  • Optional toppings: green onions, crispy shallots, sesame oil

  • Instructions

    1. Melt butter and olive oil in a stockpot over medium heat.

    2. Add garlic, onion, and celery and sauté until softened, about 3 to 4 minutes.

    3. Pour in broth and bring to a gentle simmer, seasoning with salt, pepper, and half of the chopped herbs.

    4. Add oysters and simmer gently for 2 to 3 minutes until they curl and become opaque.

    5. For creamy soup, stir in heavy cream and heat through without boiling.

    6. Squeeze in lemon juice and adjust seasoning to taste.

    7. To make an oyster rice bowl, spoon cooked rice into bowls and ladle oyster mixture on top.

    8. Garnish with remaining herbs and optional toppings before serving.

    9. Serve hot with crusty bread or a side salad.
