1. Rinse oysters under cool water and discard any that are cracked or open.
2. Preheat grill to medium-high heat (about 450°F).
3. Shuck oysters with an oyster knife, keeping the oyster in the bottom shell with its liquor.
4. In a small pan, melt butter over low heat, add garlic, cook 1 minute until fragrant.
5. Remove pan from heat and stir in lemon juice, zest, parsley, salt, and pepper.
6. Place oysters on grill grates or in a cast-iron pan, spoon 1 teaspoon of lemon butter onto each oyster.
7. Grill with lid closed for 5–7 minutes until edges curl and butter bubbles, adding optional toppings in the last 2 minutes.
8. Remove oysters with tongs and arrange on a platter lined with rock salt.
