  • 1 to 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 3/4 cup long grain white rice
  • 6 cups low sodium chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano or thyme
  • 2 tablespoons fresh parsley or dill, chopped
  • Salt and pepper to taste

  • Instructions

    1. Trim excess fat from the chicken and dice vegetables.

    2. Rinse rice under cold water until water runs clear.

    3. Place chicken in the slow cooker and layer carrots, celery, onion, garlic, oregano, salt, and pepper on top.

    4. Add rinsed rice and pour in chicken broth, then stir gently.

    5. Cook on low for 6–7 hours or high for 3–4 hours.

    6. Remove chicken, shred with forks, and return to the cooker.

    7. Stir in fresh lemon juice during the last 15 minutes of cooking.

    8. Adjust consistency with extra broth if needed and season to taste before serving.
