Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
2. Pat chicken breasts dry and season both sides with salt, black pepper, and italian seasoning.
3. In a bowl whisk together ricotta cheese, lemon juice, lemon zest, minced garlic, olive oil, and parmesan cheese.
4. Spread half of the ricotta mixture in the bottom of the baking dish.
5. Place seasoned chicken breasts on top of the ricotta base and spoon remaining ricotta mixture evenly over each breast.
6. Bake uncovered for 25 to 30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
7. For a golden top, switch oven to broil and broil for 2–3 minutes.
8. While chicken bakes, sauté spinach or blanch asparagus with a drizzle of olive oil and a squeeze of lemon.
9. Arrange vegetables beside the chicken on serving plates.
10. Garnish with chopped fresh parsley and serve immediately.
