1. Preheat oven to 400°F. Slice garlic heads, drizzle with olive oil, wrap in foil and roast 35–40 minutes until soft.
2. Place potatoes in a pot, cover with cold salted water, bring to a boil and cook 15–20 minutes until fork tender, then drain.
3. Mash potatoes with a ricer or masher, stir in roasted garlic paste, butter, salt, and pepper. Gradually add warm milk and cream, then fold in sour cream until smooth.
4. In a skillet over medium heat, melt butter or heat oil. Add sourdough pieces and minced garlic, cook 5–7 minutes until crisp, then season with sea salt and herbs.
5. Spoon mashed potatoes into bowls or a dish, cool to room temperature, cover and refrigerate up to 2 days. Reheat gently with a splash of milk and top with sourdough croutons before serving.
