Description

Sweet and citrusy roasted carrots and parsnips glazed with pure maple syrup, fresh orange juice, and thyme. A cozy vegan side dish perfect for winter dinners and holiday gatherings.

  • 4 medium carrots, peeled and cut into 1/2-inch sticks
  • 4 medium parsnips, peeled and cut into 1/2-inch sticks
  • 3 tablespoons pure maple syrup
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves, chopped
  • salt and pepper to taste

  • Instructions

    1. Preheat the oven to 400°F (200°C).

    2. In a large bowl whisk together maple syrup, orange juice, orange zest, olive oil, thyme, salt, and pepper.

    3. Add carrots and parsnips to the bowl and toss until evenly coated in the glaze.

    4. Arrange the vegetables in a single layer on a parchment-lined baking sheet.

    5. Roast in the oven for 30 minutes, then toss the vegetables and continue roasting for 5–10 minutes until edges are golden and centers are tender.

    6. Remove from the oven and drizzle with any remaining glaze in the bowl.

    7. Garnish with extra thyme leaves or orange zest before serving.
