Instructions
1. Whisk flour, salt, and sugar in a bowl.
2. Cut in cold butter until mixture resembles coarse crumbs.
3. Add ice water one tablespoon at a time until dough holds together.
4. Divide dough into two disks, wrap, and chill for 30 minutes.
5. Combine pears, maple syrup, brown sugar, lemon juice, vanilla, cornstarch, cinnamon, and walnuts.
6. Preheat oven to 400°F (200°C).
7. Roll out one dough disk and fit into a 9-inch pie dish, trimming excess.
8. Fill crust with pear mixture.
9. Roll out second disk and cover pie or cut into lattice strips and arrange on top.
10. Seal and crimp edges, brush with beaten egg, and sprinkle raw sugar.
11. Bake at 400°F for 20 minutes, then reduce to 350°F and bake 35–40 minutes.
12. Let cool on a rack for at least 2 hours before slicing.
