Mediterranean Chicken Bowls

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • salt and freshly ground black pepper to taste
  • 1 1/2 cups cooked brown rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup diced cucumber
  • 1/2 red onion thinly sliced
  • 1 cup roasted bell peppers or zucchini
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • 1 teaspoon Dijon mustard or Greek yogurt
  • 1 teaspoon honey
  • salt pepper and a pinch of dried oregano
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons sliced Kalamata olives
  • 2 tablespoons chopped fresh parsley or mint

  • Instructions

    1. in a bowl whisk olive oil lemon juice garlic oregano salt and pepper and marinate chicken for at least 20 minutes

    2. preheat a grill pan or outdoor grill to medium high heat and cook chicken 5 to 6 minutes per side until 165f then rest and slice

    3. prepare grains according to package instructions and chop vegetables

    4. whisk dressing ingredients in a small bowl until smooth and adjust seasoning

    5. assemble bowls by layering grains chicken and vegetables then drizzle dressing and top with feta olives and herbs

    6. serve warm or chilled with optional tzatziki or hummus
