  • 1 1/2 cups yellow lentils, rinsed
  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 14.5 oz can diced tomatoes
  • 5 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 3/4 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

  • Instructions

    1. Select Sauté on Instant Pot and heat olive oil

    2. Add onion, carrots, and celery and cook until onions are translucent, about 3–4 minutes

    3. Stir in garlic and cook 30 seconds until fragrant

    4. Add cumin, coriander, paprika, and thyme and cook 30 seconds

    5. Pour a splash of broth and deglaze the pot, scraping up any browned bits

    6. Add rinsed lentils, diced tomatoes, and remaining broth; stir to combine

    7. Lock the lid and Pressure Cook on High for 14 minutes (10 minutes if lentils are pre-soaked)

    8. Allow natural release for 10 minutes, then perform a quick release

    9. Open lid, stir in lemon juice and season with salt and pepper

    10. Serve garnished with parsley and a drizzle of olive oil
