1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment or dust with cornmeal
2. Stir together sourdough discard, flour, baking powder, salt, and olive oil
3. Add water as needed until a soft, pliable dough forms
4. Rest the dough for 10-15 minutes
5. Roll dough into a 1/4-inch thick rectangle on a floured surface
6. Spread pizza sauce over the dough leaving a small border
7. Sprinkle mozzarella and desired toppings over the sauce
8. Roll dough into a log and pinch the seam to seal
9. Cut the log into 1-inch pieces and arrange on the baking sheet
10. Brush rolls with olive oil and bake for 15-18 minutes until golden and bubbly
11. Cool slightly before serving
