My Granny’s Addictive Grated Zucchini Casserole

Description

A golden-topped, cheesy grated zucchini casserole with a tender center and crisp edges—simple, comforting, and perfect as a side or light main.


Ingredients

  • 4 medium zucchini, coarsely grated (about 6 cups)
  • 1 tsp kosher salt, for draining
  • 2 large eggs, lightly beaten
  • 1 1/2 cups shredded cheese (cheddar, mozzarella, or mix)
  • 1/2 cup plain breadcrumbs (or gluten-free)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley (or basil/oregano)
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp olive oil or melted butter, for the dish
  • 1/4 cup grated Parmesan, for topping (optional)

  • Instructions

    1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish with olive oil or butter.

    2. Place grated zucchini in a colander, toss with kosher salt, and let drain 10–15 minutes.

    3. Squeeze zucchini very dry in a clean towel or paper towels; discard liquid.

    4. In a large bowl, mix zucchini, eggs, onion, garlic, parsley, 1 1/2 cups shredded cheese, breadcrumbs, pepper, and red pepper flakes if using. If mixture seems wet, add 1–2 tbsp more breadcrumbs.

    5. Spread mixture evenly in prepared dish; smooth the top. Sprinkle Parmesan or extra cheese on top if desired.

    6. Bake 30–35 minutes until set in the center and deeply golden at the edges.

    7. Rest 10 minutes before slicing. Serve warm as a side or light main.
