1. In a large bowl combine starter, warm water, milk, melted butter, and sugar.
2. Add flour and salt, stirring until no dry bits remain; cover and rest 8–12 hours at room temperature.
3. After bulk fermentation, turn dough onto a lightly floured surface and divide into 8 pieces.
4. Shape each piece into a 6-inch log, place seam-side down on parchment-lined sheet.
5. Cover and proof 1 1/2–2 hours until puffy and springy.
6. Preheat oven to 375°F (190°C) while buns proof.
7. Brush buns with egg wash or milk, sprinkle seeds if desired.
8. Bake 18–22 minutes until golden and internal temperature reaches 190°F (88°C).
9. Cool on a wire rack before serving.
