1. Heat olive oil in a large pot over medium heat until shimmering
2. Add diced onion and cook until translucent, about 2 to 3 minutes
3. Stir in minced garlic and cook until fragrant, about 30 seconds
4. Add chicken pieces, season with salt and pepper, and cook until lightly browned, about 4 to 5 minutes
5. Stir in carrots, potatoes and dried thyme and cook for another 2 to 3 minutes
6. Pour in chicken broth and bring to a boil, then reduce heat to low, cover and simmer for 20 minutes
7. Add green beans and corn and cook until tender, about 5 to 7 minutes
8. Adjust seasoning with salt, pepper and optional lemon juice, garnish with parsley or spinach and serve
