A simple, healthy and flavorful one-pot meal combining tender chicken, al dente pasta, tangy artichokes and creamy basil pesto in under 30 minutes. Perfect for weeknight dinners with minimal cleanup.

1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
2. Season chicken with salt and pepper and sear until golden brown, about 4–5 minutes.
3. Add minced garlic and cook until fragrant, about 30 seconds.
4. Pour in chicken broth and light cream, then add dry pasta and stir to combine.
5. Bring to a gentle boil, reduce heat to medium-low, cover and simmer for 10–12 minutes, stirring occasionally.
6. Fold in artichoke hearts and stir gently to combine.
7. Reduce heat to low and add pesto and Parmesan, stirring until sauce is creamy and coats the pasta and chicken.
8. Season with additional salt, pepper or a squeeze of lemon if desired.
9. Stir in spinach until wilted, if using, then garnish with extra Parmesan or fresh basil and serve.
